Baked Apricot recipe

|800 g||apricots, halved, drained|
|110 g||caster sugar|
|1 tsp||vanilla extract|
|2 medium||eggs, beaten|
|200 ml||plain yogurt|
|300 ml||sour cream|
|butter, melted, for greasing|
Preheat oven to 190°C. Grease an ovenproof dish with the melted butter.
Place the apricots, cut side down over base of prepared dish.
Sift the flour and sugar into a large bowl. Add vanilla, eggs, yogurt and sour cream. Whisk until well combined.
Pour the sour cream mixture over the apricots and bake for 20-25 minutes.
To serve, spoon into bowls and serve immediately.
