Baked apricot recipe details
Ingredients
800 g | apricots, halved, drained |
60 g | flour |
110 g | caster sugar |
1 tsp | vanilla extract |
2 medium | eggs, beaten |
200 ml | plain yogurt |
300 ml | sour cream |
butter, melted, for greasing |
Instructions
Preheat oven to 190°C. Grease an ovenproof dish with the melted butter.Place the apricots, cut side down over base of prepared dish.
Sift the flour and sugar into a large bowl. Add vanilla, eggs, yogurt and sour cream. Whisk until well combined.
Pour the sour cream mixture over the apricots and bake for 20-25 minutes.
To serve, spoon into bowls and serve immediately.
