Bacon and Tomato Strata

Everything should get a topping of bacon at the end of cooking like this tasty breakfast casserole does. The world would be a better, more manly place.

Ingredients
Serves: 8
- 4 eggs
- 4 large egg whites
- 1 1/2 cups milk
- 1 1/2 teaspoons curry powder
- 1/2 teaspoon salt
- 1/8 teaspoon black pepper
- 2 teaspoons vegetable oil
- 10 slices bread
- 2 tomatoes, thinly sliced
- 1 cup shredded sharp Cheddar cheese
- 4 strips bacon, cooked crisp
Preparation method
Prep: 15 mins | Cook: 50 mins | Extra time: 1 hour, soaking
1. Cook the bacon until it’s crisp. Put on paper towels to drain.
2. In a mixing bowl, beat eggs with egg whites, milk, curry powder, salt, and pepper until frothy.
3. Coat a 13×9-inch baking dish with nonstick cooking spray. Layer bread in the baking dish bottom, cutting slices to fit in you need to. Top with half of the tomato slices, sprinkle with 1/2 cup cheese, then repeat with bread, tomato, and cheese.
4. Pour egg mixture evenly over the layered bread and tomatoes. Use a spatula to press the bread down into the egg, then cover with foil or plastic wrap and allow to stand and soak for 1 hour. If making ahead, refrigerate for 8 hours or overnight.
5. Preheat oven to 350 degrees F. Bake strata uncovered for 40 minutes, then place bacon on top of the dish and bake for 10 more minutes.
