|2||ripe avocados, peeled and cut into 1cm cubes|
|salt and freshly ground black pepper|
|½||cucumber, peeled, seeded and cut into 1cm cubes|
|2 large||tomatoes, peeled, seeded and diced|
|2||spring onions, thinly sliced|
|1||red hot chili pepper, seeded and chopped|
|½ tbsp||lemon juice|
|½ tbsp||sherry vinegar|
|2 tbsp||olive oil|
InstructionsIn a salad bowl, combine the avocado with tomato, chili and cucumber and toss gently.
In a small bowl mix the lemon juice with vinegar, salt, sugar and pepper. Whisk in the oil until creamy.
Drizzle the salad with the dressing and serve sprinkled with the spring onions.
