Aunt eileen's chicken pot pie recipe details
The easiest chicken dish I have ever made. Great for winter with soup or salad. You can brush your crust for finish if you like, with milk or egg wash.
Ready in: 1 hour 15 mins
Ingredients
Serves: 6- 1 pie crust, bottom and top
- 2 tablespoons butter or margarine
- 4 boneless chicken breast
- 1 (20 ounce) box frozen mixed vegetables
- 1 (10.75 ounce) can cream of chicken or cream of mushroom soup
- salt and pepper to taste
Preparation method
Prep: 15 mins | Cook: 1 hour1. Preheat oven to 350 degrees F (175 degrees C). Prepare crust, make your own or use a frozen one. Defrost frozen crust to make pliable for the top.
2. Cook chicken in frying pan with butter. Cut chicken into bite size pieces.
3. In a bowl, mix chicken, vegetables, soup and salt and pepper. Put mixture in crust. Cover with top crust and seal with a fork.
4. Bake in preheated oven until filling is bubbly and crust is golden, about 1 hour.
