Asparagus with truffle oil dressing recipe details
Ingredients
1 kg | asparagus, washed, trimmed |
For the Dressing: | |
2 tbsp | white truffle oil |
1 ½ tbsp | olive oil |
1 tbsp | wine vinegar |
¼ tsp | fresh lemon juice |
1 tsp | salt and pepper, to taste |
Instructions
Blanch the asparagus in lightly salted boiling water until crisp-tender, about 3 minutes. Remove from heat and drain well.Vinaigrette:
Combine truffle oil, olive oil, wine vinegar, lemon juice, salt and black pepper and whisk well.
Toss asparagus with truffle vinaigrette to lightly coat and serve.
