Ingredients
Serves: 4- 2 pounds fresh asparagus, trimmed
- 3 tablespoons olive oil
- 1 teaspoon flour
- 3 tablespoons heavy cream
- 1 tablespoon lemon juice
- 2 teaspoons minced fresh tarragon
- Salt, to taste
Preparation method
Prep: 10 mins | Cook: 5 mins1. Bring 1 inch of water to boil in a steamer over high heat. Set asparagus in steamer basket, cover, and cook for about 4 minutes, until bright green and slightly limp. Remove from heat, pour off water and cover with foil or dish towel to keep warm.
2. Whisk olive oil and flour together in a saucepan over medium heat. Add cream and whisk until smooth. When cream boils, turn heat down to medium and simmer for 1 to 2 minutes to thicken.
3. Add lemon juice, tarragon, and salt to the sauce. Serve sauce spooned over steamed asparagus.
