Asparagus with citrus sauce recipe details
Ingredients
1 kg | asparagus, trimmed |
1 | orange |
2 tbsp | mayonnaise |
1 tbsp | olive oil |
½ tsp | dried oregano, chopped |
½ tsp | salt |
Instructions
Fill a saucepan with 2cm of water. Cover and heat to boiling on high.Add asparagus and salt. Cook 4-5 minutes or until crisp-tender, turning occasionally. Drain asparagus and quickly rinse under cold water. Drain again.
Citrus sauce:
FGrate 1/2 teaspoon orange peel into a small bowl. Squeeze 60ml juice into the same bowl. Whisk in mayonnaise, olive oil and chopped oregano.
Transfer asparagus to platter and drizzle with citrus sauce.
