Asparagus sauce recipe details
Ingredients
200 g | asparagus, woody ends removed, cut at an angle into 0.5cm pieces |
1 | lemon, juice and zest |
1 tbsp | oil |
50 g | ham, diced |
150 ml | vegetable stock |
150 g | crème fraîche |
salt and pepper |
Instructions
In a pan heat the oil and fry the ham until slightly golden. Add the asparagus and stir-fry for 2-3 minutes. Deglaze with the stock and simmer for 4-5 minutes.Stir in the crème fraîche. Season to taste with salt, pepper, lemon peel and lemon juice.
