Asparagus Salsa recipe
|1 kg||green asparagus, woody ends removed|
|100 g||pine nuts|
|1 glass(es)||olive oil|
|½ tsp||wine vinegar|
Cook the asparagus in salted water for 20 minutes. Drain and allow to cool.
Transfer the cooked asparagus, pine nuts, oil and basil into a blender and process until smooth. Season to taste with salt and wine vinegar.
Serve with pasta or fresh bread.
