|300 g||tomatoes, peeled and diced|
|250 ml||coconut milk|
|650 ml||vegetable stock|
|4||spring onions, sliced|
|25 g||ginger, grated|
|2||chilies, seeded and sliced|
|200 g||shrimp, peeled and cooked|
|3 tbsp||soy sauce|
|3 tbsp||lemon juice|
InstructionsIn a saucepan heat the oil and fry the spring onions, ginger and chilies over low heat until lucent.
Pour in the coconut milk and the stock and bring to the boil. Cook for 5 minutes. Stir in the shrimp and the tomatoes. Bring to a short boil again, then take the soup from heat and season to taste with soy sauce and lemon juice.
