Apricot nut bread recipe details
Ingredients

apricots, washed, pitted, quartered |

corn syrup |

walnuts, chopped |
Instructions
Grease and flour a loaf pan. Preheat oven to 180°C.Pour boiling water over apricot chunks and let stand for 15 minutes.
Meanwhile mix together flour, baking powder and salt.
In another bowl, combine butter, sugar, eggs and corn syrup; mix until smooth. Stir in chopped apricots with water in which they were soaked and stir in nuts.
Gradually add dry ingredients to the mix.
Spoon batter into prepared pan. Bake for about 70 minutes or until wooden pick inserted in center of loaf comes out clean.
Cool in pan 10 minutes and then remove bread from pan; cool on rack.
