Apricot Chicken Salad recipe

Ingredients
1 kg | chicken breast, skinless, boneless, chopped |
5 tbsp | olive oil |
1 small | onion, chopped |
4 large | apricots, pitted, diced |
mayonnaise | |
salt and pepper, to taste |
Instructions
Heat the oil in a frying pan and cook chicken with the chopped onion until lightly browned.
Remove from heat and add the apricots and some mayonnaise to the pan. Stir to combine. Season with salt and pepper.
