Apricot chicken curry recipe details
Ingredients
4 | apricots for the sauce, stoned and peeled |
1 tbsp | apricot preserves |
2 tbsp | fish sauce |
juice and zest of 1/2 lemon | |
1 tbsp | oil |
1 tbsp | red curry paste |
500 g | chicken breast, cut into bit sized pieces |
6 | apricots, stoned and peeled and cut into bite sized pieces |
10 g | cilantro, chopped |
1 | red chili, sliced, for garnish |
Instructions
Combine the apricots, apricot preserves, fish sauce, lime juice and zest in a blender and process until smooth. Set aside.Heat the oil in a pan and add the red curry paste. Sauté for 1 minute.
Add the chicken and the apricot sauce and cook on low heat until the chicken is cooked, about 6-10 minutes.
Add the apricots and simmer for a minute.
Stir in the cilantro and serve.
Serving suggestion:Serve with rice and garnish with sliced red chilies.
