Apricot blatjang recipe details
Ingredients
250 g | ready to eat apricots |
1 | red onion, quartered |
1 | red chili, seeded and finely chopped |
2 clove(s) | garlic, finely sliced |
50 ml | white malt vinegar |
1 tbsp | muscovado or dark brown sugar, heaped |
Instructions
Put the apricots in a bowl and pour over 600ml boiling water. Leave for 30 minutes to soak and cool.Transfer the apricots and their soaking liquid into a food processor, add all the remaining ingredients, then blitz until smooth.
Tip into a saucepan, then cover and simmer for 20-25 minutes until thick and pulpy.
