Ingredients

250 g ready to eat apricots
1  red onion, quartered
1  red chili, seeded and finely chopped
2 clove(s) garlic, finely sliced
50 ml white malt vinegar
1 tbsp muscovado or dark brown sugar, heaped

Instructions

Put the apricots in a bowl and pour over 600ml boiling water. Leave for 30 minutes to soak and cool.

Transfer the apricots and their soaking liquid into a food processor, add all the remaining ingredients, then blitz until smooth.

Tip into a saucepan, then cover and simmer for 20-25 minutes until thick and pulpy.
