Apricot Blatjang recipe

|250 g||ready to eat apricots|
|1||red onion, quartered|
|1||red chili, seeded and finely chopped|
|2 clove(s)||garlic, finely sliced|
|50 ml||white malt vinegar|
|1 tbsp||muscovado or dark brown sugar, heaped|
Put the apricots in a bowl and pour over 600ml boiling water. Leave for 30 minutes to soak and cool.
Transfer the apricots and their soaking liquid into a food processor, add all the remaining ingredients, then blitz until smooth.
Tip into a saucepan, then cover and simmer for 20-25 minutes until thick and pulpy.
