Apricot and lime sorbet recipe details
Ingredients
5 | limes, juice, zest of 2 |
75 g | sugar |
1 tbsp | sugar |
1 kg | apricots, stones removed and sliced |
pulp of half a vanilla pod | |
250 g | raspberries |
Instructions
Bring 125 ml of the lime juice with 75 g of the sugar to a boil. Allow to cool. Purée the apricots. Mix together the apricot purée, lime syrup and lime zest. Freeze for 4 hours.Purée the raspberries with the remaining sugar and the vanilla pulp.
Serve the sorbet with the raspberry sauce.
