Apple tansy recipe details
Ingredients
250 g | apples, peeled and coared |
30 g | unsalted butter |
25 g | bread crumbs |
3 medium | eggs, separated in yolks and whites |
1 tbsp | sugar |
40 ml | double cream |
2 tbsp | calvados |
zest of 1 lemon, grated | |
icing sugar for dusting and decoration | |
mint sprigs for decoration |
Instructions
Melt the butter in a frying pan and add the apples and lemon zest. Cook gently over low heat until the apples begin to soften (about 5 minutes).Then add the sugar and stir until the sugar melts and the mixture becomes syrupy (about 5 minutes).
Gradually add the breadcrumbs and stir into the mixture so that they soak up the syrup. Only add just enough breadcrumbs to soak up the liquid.
Meanwhile add the egg whites to a clean bowl and whisk into soft peaks.
In a another bowl beat together the egg yolks, cream, nutmeg and calvados. Slowly add the egg yolk mixture into the apple mixture, stirring slowly.
Fold in the egg whites and continue cooking on very low heat for a few minutes until the mixtures sets.
Still warm, fill into serving bowls and dust with icing sugar. Decorate with a few sprigs of mint and serve.
