Apple or Cranberry Orange Raisin Bread with Lemon Glaze recipe

- Ingredients for Bread
- 1 apple peeled, cored and sliced or 1 cup cranberries
- 1/2 half medium orange cut into 6 pieces
- 1 cup yellow raisins
- 1 cup pecans
- 2 eggs
- 1/2 cup oil
- 1/2 cup orange juice
- 1-1/4 cup sugar
- 1 teaspoon vanilla
- 3 cups flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- Ingredients for Glaze
- 1 Tablespoon Lemon juice
- 3/4 powdered sugar, sifted
Place first nine ingredients in the bowl of a food processor and blend for 30 seconds. (Do not put cranberries in but after mixture is done add.) Scrape down sides and continue blending until fruit and nuts are chopped (not pureed) about 30 seconds.
In a large bowl combine other ingredients. Add fruit and nut mixture to bowl and stir until dry ingredients are just moistened. DO NOT OVERMIX.
Put batter in greased 9 X 5 inch loaf pan place pan on cookie sheet and bake at 350 dig oven for 30-40 minutes or until cake tester comes out clean. Cool in pan 15 minutes then remove and cool on wire rack.
Glaze: Stir together lemon juice and powdered sugar till mixed. When bread is cool drizzle top with lemon glaze.
