Apple Oat Muffins recipe

|1||apple, peeled, cored, grated|
|2 medium||eggs, whites only|
|200 g||rolled oats|
|1 ½ tsp||baking powder|
|1 ½ tsp||cinnamon, ground|
Preheat oven to 180°C. Spray a muffin pan with cooking spray.
Combine buttermilk and oats in a large bowl. Add the egg whites and honey and mix well.
In another bowl mix together the flour, baking powder, cinnamon and salt.
Blend the two mixtures together and fold in the grated apple.
Fill the muffin cups 3/4 full and bake for 20-25 minutes.
Remove from oven and leabe to cool in the pan for about 10 minutes.
