Apple nut muffins details
- Ingredients:
- 3/4 cup vegetable oil
- 1 cup sugar
- 2 eggs
- 1 teaspoon vanilla
- 2 cups all-purpose flour
- 3/4 teaspoon baking soda
- 3/4 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1-1/2 cups diced apples (Gravestein or Golden Delicious)
- 1/2 cup golden raisins
- 1/2 chopped nuts
In large bowl, beat oil and sugar with electric mixer until smooth. Add eggs and vanilla, beat one minute. In a second bowl, mix remaining dry ingredients, then add to oil mixture. Stir just to combine. Fold in apples, raisins, and nuts. Spoon into muffin cups – bake at 400 degrees for 25 to 30 minutes.
For an added sweetness- top muffins with equal parts of flour, sugar, and butter. Cut butter into dry mixture until crumbly.
Yields: 6 large muffins
