This bread won third prize in the “breads” category at the 1995 Apple Butter Festival in Berkeley Springs, West Virginia. Our guests raved about their morning toast and begged for the recipe!

Ingredients
2 cups oatmeal
2 teaspoons salt
1/3 cup maple syrup
2 Tablespoons canola oil
1-1/2 cups apple butter (fruit only, if available)
1 Tablespoon yeast
8 to 10 cups flour
Instructions:

Place oatmeal, salt, syrup, canola oil, and apple butter in a large bowl. Pour 1-1/2 cups boiling water over mixture and set aside.

Soften yeast in 1/3 cup warm (not hot) water. Add mixture from large bowl. Stir in flour until your hands must replace your spoon as mixers. Knead dough for 10 minutes, adding more flour if it is too sticky. When dough is smooth and elastic, place in oiled bowl and oil top of dough as well. Let rise 1 hour in a warm place until double size in bulk. Punch down dough and knead again for 10 minutes. Form into 2 loaves and let rise in two buttered loaf pans for 50 to 60 minutes. Then bake for 50 minutes at 350 degrees. Remove from pans and thump bottom of loaves. If they sound hollow they are done. Cool on wire racks completely for best slicing or cut into them immediately if you can’t wait!
