Ingredients
For the dough: | |
300 g | flour |
50 g | corn starch |
1 tsp | baking powder |
150 g | sugar |
1 tsp | vanilla extract, 1-2 tsp |
1 pinch(es) | salt |
2 | eggs |
150 g | butter |
For the filling: | |
2 kg | tart apples |
1 | lemon, juice |
3 packet(s) | custard powder, vanilla flavoured |
150 g | sugar |
2 tsp | vanilla extract |
500 ml | white wine |
500 ml | apple juice |
For the Glaze: | |
3 packet(s) | jelly glaze |
100 g | sugar |
375 ml | white wine |
300 ml | apple juice |
Instructions
For the dough:Sieve the flour with the corn starch into a bowl Add the remaining ingredients and knead until well combined and smooth.
Preheat the oven to 200°C.
Roll out the dough on a greased baking tray (30*40 cm) and pierce repeatedly with a fork. Place a cake frame around the dough. Bake the dough in the preheated oven for approximately 15 minutes.
For the filling:
Meanwhile, wash, peel and quarter the apples. Remove the cores, then dice the apples and sprinkle with lemon juice. Use the following ingredients to prepare a pudding: custard powder, sugar vanilla extract, white wine and apple juice. When cooked, immediately add in the diced apples. Take the baking tray out of the oven and evenly divide the pudding mixture on the base and flatten. Transfer the baking tray into the oven again and bake at the same temperature for further 40 minutes. After the baking time, transfer the baking tray on a wire rack and allow the cake to cool completely.
For the glaze :
Prepare the jelly glaze according to package instructions, but with the following ingredients: jelly glaze powder, sugar, white wine and apple juice. Evenly divide the jelly glaze on the cooled cake and leave to set.
Gently remove the cake frame, cut the cake into slices and serve.
