Apple and marzipan cake recipe details
Ingredients
175 g | butter, soft |
150 g | flour |
50 g | sugar |
½ tsp | baking powder |
1 | egg yolk |
1 medium | egg |
2 | apples, peeled, cored and diced |
2 tbsp | rum |
1 tbsp | raisins |
1 pack(s) | vanilla sugar |
3 tbsp | almond flakes |
50 g | marzipan |
50 g | icing sugar |
½ | orange, grated peel |
¼ | pulp of a vanilla pod |

Instructions
Cream together 125g of the butter, the flour, sugar, baking powder and egg yolk. Wrap the dough into foil and refrigerate for 30 minutes.Combine the rum with raisins and the vanilla sugar.
Set 100g of the dough aside. Roll out the other dough in between two sheets of baking paper and line a buttered springform tin with the dough. Knead the reserved dough again and roll out thinly to a rectangle in between two sheets of baking paper. Cut into strips.
Sprinkle the cake bottom with the almond flakes and divide the raisins and the apples on top of the almonds. Cream together the icing sugar, 50g of butter, marzipan, egg, orange peel and the vanilla. Spread the apples with the mixture. Divide the dough strips crisscross over the filling to form a lattice with diamond-shaped spaces. Bake in the preheated oven at 150°C for 30 minutes.
Leave to cool completely. Serve dusted with icing sugar.
