Apple and blackberry cobbler recipe details
Ingredients
750 g | cooking apples, peeled cored and sliced |
400 g | blackberries, washed and drained |
1 medium | lemon, juice only |
100 g | sugar |
For the cobbler: | |
100 g | self-raising flour |
1 tsp | ground cinnamon |
50 g | butter at room temperature |
50 g | golden caster sugar |
1 medium | egg, beaten |
4 tbsp | milk |
50 g | hazelnuts, walnut or pecans, chopped |
Instructions
Preheat oven to Gas Mark 4, 180°C, 350°F.Butter a deep oven proof pie dish. Place apples in a pan with sugar and lemon juice and a splash of water (about 1 tbsp) in a sauce and bring up to heat. Cover and simmer for about 5 minutes until apples have just softened.
Add to cool for a few minutes and pour or spoon into pie dish. Add blackberries and stir briefly.
Place flour and cinnamon in a large bowl. Add butter and rub in between fingertips. Add sugar, egg and milk and lightly mix to a stiff batter. You may use a food processor if prefer.
Drop tablespoonfuls of batter over fruit, leaving gaps wherever possible. Sprinkle nuts over the top (omit in the event of a known allergy but replace with a light sprinkling of dark brown sugar).
Bake on an oven tray (in the event of overflowing juices, which is more than possible) for 25-30 minutes or until topping is crisp and golden brown. Serve immediately, with cream if desired.
Options: replace blackberries with similar weight of raspberries or blackcurrants (pick out stalks etc and rinse), or with ripe plums or peaches. If using plums or peaches, halve and remove stones and then into quarters. Cook together with apples. Continue as before.
