Ingredients
350 g | digestive biscuits, crumbled |
120 g | butter, melted |
900 g | cream cheese |
260 g | sugar |
5 | eggs |
125 ml | lime juice, fresh |
3 | egg whites |
50 g | coconut flakes |
Instructions
In a bowl mix the butter with the biscuit crumbles. Press the mixture onto the bottom of a cake tin. Place into the fridge for at least 30 minutes.Whisk the eggs with 150g of the sugar until frothy. Whisk in the cream cheese and the lime juice.
Spread the cake base with the cheese mixture. Bake in the preheated oven at 160°C for 50 minutes. Remove the cake from the oven and let cool for 15 minutes.
Whisk the egg whites with the remaining sugar until stiff. Fold in the coconut flakes. Spread the cake with the meringue mixture and bake in the preheated oven at 220°C for 5 minutes until the topping is slightly browned.
Let cool the cake to room temperature, then place into the fridge for at least 1 hour before serving.
