Almond and carrot cake recipe details
Ingredients
4 medium | eggs, separated |
100 g | sugar |
1 | lemon, juiced and zested |
70 g | flour |
80 g | oats |
1 pack(s) | baking powder |
150 g | almonds, ground |
200 g | carrots, grated |
Instructions
Mix together the egg yolks, sugar and the lemon juice. Stir in the zest, flour, oats, baking powder and the almonds. Knead until well combined.Whisk the egg whites until stiff. Fold the stiff egg whites and the carrots into the dough.
Preheat the oven to 190°C.
Pour the dough into a lined cake form and bake for 40-50 minutes.
