Another of my Super Bowl creations that was a huge hit with all who tried it.

Ingredients
Serves: 8- 2 pounds alligator – ground
- 1 Vidalia onion – diced
- 1 green pepper – diced
- 1 tablespoon olive oil
- 1 (35 ounce) can crushed tomatoes
- 1 (32 ounce) bottle V8(R) juice
- 1 (15 ounce) can black beans
- 1 (15 ounce) can kidney beans
- 1 tablespoon chili powder – heaping
- 1 tablespoon chipotle in adobo
- 1 teaspoon cumin
- 1 teaspoon cinnamon
- 1 teaspoon celery salt
- 1/2 teaspoon ginger
- salt & pepper to taste
- hot sauce
Preparation method
Prep: 30 mins | Cook: 2 hours1. Grind or chop the alligator in a food processor.
2. Saute the onion & green pepper in a large pot with the olive oil until onion is translucent. Add alligator and brown slightly.
3. Combine crushed tomatoes, V8, black beans, kidney beans & spices and let simmer slightly covered for 2 to 3 hours. May add a little water from time to time as you see fit. Serve with a dash or two of hot sauce if you so desire.
