Ingredients
Serves: 9- 1 (14 1/2 ounce) can chicken broth
- 1 cup quick-cooking grits
- 1/4 teaspoon salt
- 1 pound Cheddar cheese, shredded
- 1 cup mayonnaise
- 1 small onion, grated
- 2 (4 ounce) jars sliced pimentos, drained
- Cayenne pepper, to taste
- Olive oil
Preparation method
Prep: 25 mins | Cook: 10 mins | Extra time: 30 mins, freezing1. Combine broth and water in a saucepan and set over medium-high heat. When mixture comes to a boil, add grits and salt and place a lid on the saucepan. Cook for about 7 minutes to thicken, stirring every so often.
2. Transfer to a 9×13-inch baking dish. Cover with plastic wrap or foil and place in the freezer. Chill for 30 minutes.
3. Pulse cheese, mayonnaise, onion, and 1 jar of pimentos together in a food processor until combined. Then add remaining pimentos and cayenne to taste.
4. Preheat broiler to High. Slice grits into 2×2-inch squares. Coat with olive oil and set on a baking sheet. Spread with cheese mixture.
5. Broil for about 7 minutes, then serve.
