For the marinade: | |
1 | red chili, chopped |
3 clove(s) | garlic, chopped |
3 | shallots, chopped |
1 tsp | paprika powder |
1 tsp | rosemary, freshly chopped or powder |
salt and freshly ground black pepper | |
For the sauce: | |
6 | shallots |
6 clove(s) | garlic |
2 | red bell peppers |
2 tbsp | paprika powder |
1 tbsp | turmeric powder |
150 g | grated dried coconut |
3 tbsp | peanut butter |
500 ml | chicken stock |
4 | potatoes |
Instructions
Cut the chicken into pieces. Mix the ingredients for the marinade and add a little oil. Rub onto the chicken pieces and place the chicken pieces covered in the fridge to marinate for 4 hours.Put the shallots, garlic, bell pepper into a blender and process until smooth. Set aside.
Fry the chicken pieces in a little oil until golden brown, then transfer into a baking dish. Cut the potatoes in cubes and fry in a little oil until golden. Add to the chicken.
Fry the processed vegetables in the same oil for 5 minutes, stirring continuously, then add paprika, coconut, peanut butter and chicken stock and bring to the boil. Simmer for 5-10 minutes. Correct seasoning with salt and pepper if needed.
Pour the sauce over the chicken and potatoes and bake at 200° Celsius for 30 minutes.
Serve with rice.
