Ingredients

For the marinade:
1  red chili, chopped
3 clove(s) garlic, chopped
3  shallots, chopped
1 tsp paprika powder
1 tsp rosemary, freshly chopped or powder
salt and freshly ground black pepper
For the sauce:
6  shallots
6 clove(s) garlic
2  red bell peppers
2 tbsp paprika powder
1 tbsp turmeric powder
150 g grated dried coconut
3 tbsp peanut butter
500 ml chicken stock
4  potatoes

Instructions

Cut the chicken into pieces. Mix the ingredients for the marinade and add a little oil. Rub onto the chicken pieces and place the chicken pieces covered in the fridge to marinate for 4 hours.

Put the shallots, garlic, bell pepper into a blender and process until smooth. Set aside.

Fry the chicken pieces in a little oil until golden brown, then transfer into a baking dish. Cut the potatoes in cubes and fry in a little oil until golden. Add to the chicken.

Fry the processed vegetables in the same oil for 5 minutes, stirring continuously, then add paprika, coconut, peanut butter and chicken stock and bring to the boil. Simmer for 5-10 minutes. Correct seasoning with salt and pepper if needed.

Pour the sauce over the chicken and potatoes and bake at 200° Celsius for 30 minutes.

Serve with rice.
