30 minute shrimp jambalaya with grits recipe details

Ingredients
Serves: 4- 2 tablespoons flour
- Salt and pepper
- 8 ounces frozen okra, thawed and patted dry
- 6 tablespoons butter
- 3/4 cup quick-cooking grits
- 1 onion, chopped
- 1 green bell pepper, chopped
- 1 (28 ounce) can crushed tomatoes
- 1/2 teaspoon cayenne pepper
- 1/2 pound medium shrimp, peeled and deveined, chopped
Preparation method
Prep: 15 mins | Cook: 25 mins1. Place flour in a large plastic resealable bag. Add salt and pepper to taste, then add okra. Seal bag and shake to coat.
2. Set 1 tablespoon butter in a large skillet over medium-high heat. Cook okra in melted butter for about 5 minutes to brown, then remove to a plate.
3. Make the grits: Pour 3 cups water into a saucepan and set over high heat. When the water boils, add grits. Turn heat down to low, place a lid on the saucepan, and cook for about 7 minutes to thicken. Add 4 tablespoons butter and salt and pepper to taste.
4. Place 1 tablespoon butter in the skillet used to cook the okra. Set over medium-high heat. Cook onion and bell pepper in melted butter for about 10 minutes to brown, then add tomatoes and cayenne pepper.
5. When the mixture comes to a boil, continue to cook for about 5 more minutes to thicken. Then turn heat down to medium.
6. Stir in shrimp. Cook for about 3 minutes, until shrimp are opaque. Add okra, stir, and adjust seasoning with salt and pepper.
7. Serve the okra shrimp mixture spooned over cooked grits.
