Ingredients
Serves: 6- 3 tablespoons butter
- 3 tablespoons chopped onion
- 1 cup water
- 2/3 cup chopped celery
- 2 cups diced raw potatoes
- 1 tablespoon salt
- 1/2 teaspoon black pepper
- 4 cups milk
- 2 cups shucked oysters and their liquid
- Chopped parsley to garnish, if desired
Preparation method
Prep: 5 mins | Cook: 25 mins1. Melt butter in a saucepan over medium heat. Cook onion in melted butter for about 5 minutes to soften, then stir in water, celery, potatoes, salt, and pepper. Place a lid on the pot.
2. Cook for about 15 minutes, until potatoes are fork-tender. Then stir in milk and heat through.
3. While milk is heating through, place oysters and liquid in a separate saucepan and set over medium heat. Cook for about 3 minutes, until oysters’ edges begin to crimp. Drain.
4. Stir oysters into the chowder saucepan. Serve, garnished with parsley if desired.
