Mandarin pecan french toast recipe details
- Ingredients
- 8 ounces cream cheese, softened
- 4 large eggs, beaten until creamy yellow
- 2/3 cup fresh orange juice
- 1/3 cup milk
- 3 Tablespoons sugar
- One 8-ounce can of Mandarin oranges
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon nutmeg
- 8 slices wheat bread, trimmed
- 1/3 Cup butter
- 1/2 Cup pecan halves
Prepare Filling:Mix cream cheese with 1 tablespoon of milk, and 2 tablespoons of orange juice and mixed with 2 tablespoons of sugar and 1 egg.
Prepare Dish:Melt butter in microwave in 8 x 8-inch casserole. Place four of eight bread slices on top, cover with filling and place 8-10 orange slices on each serving. Top with second round of bread slices.
Mix eggs and remaining sugar, add and mix in vanilla, nutmeg, then remaining orange juice, then milk, stir and then pour over bread stacks. Arrange about 8 pecan halves on top of each bread stack. Cover and refrigerate 1 hour or overnight. Bake, uncovered in preheated 400 degree oven for 30 minutes or until golden. To serve, loosen edges of bread from pan sides with knife blade. Cut into individual bread size servings. Serve hot.
