INGREDIENTS:

Serves 2-3

(A)

2 chicken thighs

1 tbsp sugar

2 tbsp light soy sauce

(B)

1 tbsp curry powder

5 garlic cloves, chopped finely

1 tsp coriander seeds

2 sprigs curry leaves

Salt to taste

Oil for deep frying

(C)

½ tbsp corn flour

1 tbsp water

Method:

  1. Cut chicken thighs into pieces. Clean and drain well.

  2. Marinade with sugar and light soy sauce for about 30 minutes.

  3. Heat oil in a wok or deep fryer and deep fry chicken until golden brown.

  4. Heat 2 tbsp of oil in a wok or frying pan. Sauté chopped garlic and coriander seeds until fragrant. Add in fried chicken and curry leaves. Continue to fry. Season with curry powder and salt.

  5. Mix ingredients (C) and pour in. Fry until sauce thickens.

  6. Serve while still hot.
