This is a nice change from the traditional Mexican and tropical salsas, with a bit of a mediterranean touch this is great on grilled fish or chicken.
Ready in: 15 mins

Ingredients

Serves: 12
  • 1 large ripe tomato, diced
  • 1 yellow bell pepper, diced
  • 1/2 medium red onion, diced
  • 1 bunch small green onions, diced
  • 3 medium cloves fresh garlic, finely minced
  • 6 ounces whole pitted black olives, coarsely chopped
  • 1/2 of the brine from the canned olives
  • 1 teaspoon basil
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon seafood seasoning, like Old Bay(R) or creole seasoning

Preparation method

Prep: 15 mins

1. Combine all ingredients in bowl. Toss lightly just to blend.
2. Cover and refrigerate 1 hour or more, stirring once.
3. Stir again before serving
