Have left-over white rice from the night before? All over the Philippines, Sinangag rice is served as breakfast in homes and TapSiLog (Tapa, Sinangag, Longganiza) stalls that are often 24-hour establishments catering to night workers, taxi, and truck drivers. This recipe is unique to me; everyone I’ve served it to keeps asking me to cook it for them again. It’s a great “energy” food for people who are physically stressed.

Ingredients

Serves: 4
  • 2 large cloves of garlic, peeled
  • 6 leek stalks
  • 2 1/2 tablespoons vegetable oil
  • 1/2 tablespoon butter
  • 6-8 cups cooked white rice (Thai Jasmine is recommended being the closest thing to Philippine rice)
  • 3 teaspoons salt (to taste)
  • 3 tablespoons Kikkoman(R) Soy Sauce
  • 1 egg

Preparation method

Prep: 5 mins | Cook: 10 mins

1. Divide the two large cloves of garlic into three groups. Mince the first two and crush the third portion with the broad side of your kitchen knife.
2. Cut the leeks into half inch sections, only to the part where the leaves begin.
3. Put a large saucepan or wok on the burner and warm the pan to medium to high heat. Immediately add the oil and add the butter as the oil begins to simmer.
4. Add the first batch of garlic and fry until golden brown. Add all of the rice and mix it in evenly with the sauteéing garlic.
5. Add the salt and soy sauce and stir for 1 minute. Add the second batch of garlic and mix the rice until the garlic browns slightly.
6. Add egg and evenly mix it into the rice. Stir and let fry for 2 minutes. Add the last batch of crushed garlic and leeks. Stir and fry these into the rice for 1 minute or until you notice the last batch of leeks and garlic begin to “sweat.”Serving suggestions

Serve with a large can of high quality corned beef that has been sauteéd with 2-3 shallots or Red Onions depending on size.
