Ingredients

750 g apples, peeled, cored and quartered
4 tbsp lemon juice
200 g soft butter
125 g sugar
1 pack(s) vanilla sugar
1 pinch(es) salt
4 medium eggs
150 g buckwheat flour
250 g ground almonds
2 tsp cocoa powder
2 tsp cinnamon
½ pack(s) baking powder
1 pinch(es) baking soda
5 tbsp milk
100 g apricot jam

Instructions

Carve the rounds of the apple quarters several times. Sprinkle with the lemon juice.

In a bowl, cream together the butter, sugar, vanilla sugar and a pinch of salt. Add the eggs and whisk until pale yellow. Stir in the buckwheat flour, almonds, cocoa, cinnamon, baking powder and soda in turn with the milk.

Preheat the oven to 175°C.

Dust a buttered cake form with flour. Pour in the batter and divide the apple quarters, round side up, on top. Bake for 40-45 minutes. Remove from the oven and allow to cool.

Heat the jam and spread the cake with the warm jam. Allow to dry. Serve with whipped cream.
