Ingredients

500 g potatoes, peeled and diced
3  onions, chopped
salt and freshly ground black pepper
3  carrots, peeled and sliced
1 ½ l beef stock
4 tbsp parsley, chopped
4 slice(s) bacon, chopped

Instructions

In a saucepan, bring the stock to a boil. Add the bacon, onions, potatoes and the carrots. When boiling again, reduce the heat, cover and cook over low heat for 70-90 minutes until the soup is thick and creamy.

Season to taste with salt and pepper. Stir in the parsley and serve immediately.
