Ingredients

2 tbsp lime juice
4 sprig(s) mint, chopped
400 g yoghurt
salt and pepper
1 tsp honey
1 stalks leek, sliced
200 g broccoli
1  red bell pepper, sliced
200 g carrots, sliced
4 stalks celery, sliced
½  cucumber, sliced
4 tbsp oil

Instructions

In a bowl, mix together the mint, yoghurt and lime juice. Season to taste with salt and honey.

In a pan, heat half of the oil. Fry the broccoli over low heat for 2 minutes. Stir in the carrots, celery and 1 tablespoon of oil. Fry for 3 more minutes. Stir in the bell pepper, leek, cucumber and the remaining oil. Fry for 2-3 more minutes. Season with salt and pepper.

Serve the vegetables with the mint yoghurt.
