Ingredients

100 g flour
70 g confectioner’s sugar
grated rind of 1 orange
3 medium eggs, yolks only
500 ml fruit jam
120 g butter
1 tbsp honey
1 tbsp granulated sugar

Instructions

Combine the flour, sugar and the grated orange rind in a bowl and mix well.

Knead in the softened butter, the honey and 2 egg yolks. Knead only long enough to mix the ingredients thoroughly.

Use 2/3 of the pastry to line a greased, sugar dusted tart pan. Spread the jam over the pastry.

Brush the remaining dough with a beaten egg yolk and use make strips. Lay the strips over the tart in a criss-cross pattern.

Preheat oven to 170°C.

Bake for about 35 minutes.
