Ingredients

250 g soft butter
200 g sugar
1 pinch(es) salt
1  lemon, grated rind
250 g flour
1 tbsp rum
250 g sultanas
65 g candied lemon peel
65 g candied orange peel
100 g candied cherries
50 g flour
4  eggs

Instructions

In a bowl combine the butter, sugar, salt, lemon zest, 250g flour and the rum. Beat in the eggs and whisk until well combined.

Preheat the oven to 175°C.

Mix together the sultanas, candied lemon and orange peel, candied cherries and 50g of the flour and fold the mixture in the batter. Pour the batter into a lined cake form and bake for 60-70 minutes.
