Ingredients

4 large apples, cored
2 tbsp lemon juice
4 tbsp cranberry jam
2 tbsp rum or cognac
1 tbsp butter, soft
130 ml white wine
2  egg whites
2 tbsp vanilla sugar
1 pinch(es) salt

Instructions

Preheat the oven to 200°C.

Pour lemon juice into the cored apples. Mix together cranberry jam and rum or cognac. Stuff the apples with the mixture and place into a buttered casserole dish. Drizzle with white wine and bake the apples for about 25 minutes.

In the meantime whisk the egg whites with a pinch of salt and the vanilla sugar until stiff. Place a dollop of the beaten egg white on top of each apple and bake at 150°C for about 10 minutes more.

Serve hot on dessert plates accompanied by custard or vanilla ice cream.
