Zucchini potato soup recipe details
Ingredients
500 g | zucchini, grated |
1 medium | onion, finely chopped |
1 tbsp | butter |
200 g | potatoes, grated |
500 ml | chicken or vegetable broth |
240 ml | water |
1 pinch(es) | fresh basil and thyme |
Instructions
Put the butter in a large casserole or pan. Fry the onions, covered, on high heat for 2-3 minutes. Add potatoes and herbs. Cover and cook on high heat for 6-8 minutes. Add zucchini, and cook on high heat for 4-6 minutes. Stir after each addition.Puree everyhting in a blender until smooth.
Return to casserole with broth. Cover and cook on high heat for 10 minutes. Stir once and bring to the boil. Then add the milk and season with salt and pepper.
Serve hot or cold.
