Zucchini dill puree recipe details
Ingredients
1 medium | zucchini |
120 ml | buttermilk |
1 tbsp | fresh dill |
¼ tsp | nutmeg, ground |
1 ½ tbsp | chicken or vegetable broth |
salt and freshly ground pepper, to taste |
Instructions
Scrub zucchini, trim, and cut crosswise in half. Cut each half into 8 wedges. Heat a large sauce pan and bring to the boil. Add salt. Add zucchini and boil until tender. Drain well.Put zucchini, buttermilk, dill and nutmeg in a blender and process until smooth. Thin the sauce with enough broth to make it pourable. Season to taste with salt and pepper.
Serve warm with fish or steamed vegetables.
