Zucchini casserole with bacon recipe details
Ingredients
600 g | zucchini, peeled, sliced |
6 slice(s) | bacon |
1 tbsp | butter |
1 large | onion, chopped |
200 ml | tomato sauce |
60 g | Parmesan cheese, grated |
salt and pepper, to taste |
Instructions
Preheat oven to 170°C.Melt butter in a saucepan and fry bacon until just cooked but not crisp. Add onion and cook until softened. You may need to add a little water (or wine, if desired) so that the onion does not burn. Stir in zucchini and tomato sauce and season with salt and pepper.
Pour zucchini mixture into a greased casserole dish and sprinkle with grated cheese. Cover and bake at 350° for about 30 minutes.
