Worcestershire apple pudding recipe details
Ingredients
2 | cooking apples, peeled, cored and sliced |
90 g | sugar |
½ | lemon, juice and grated peel |
170 g | butter, softened to cream |
2 | eggs |
1 | egg yolk |
230 g | shortcrust pastry |
candied lemon peel |
Instructions
In cold water rinse the apples, then put them in a saucepan, also rinsed with cold water. Add the sugar. Over low heat simmer gently. Cook until the apples are tender. Stir in the lemon juice and rind and the creamed butter. Whisk the eggs and the egg yolk and stir into the apple mixture.Preheat the oven to 190°C.
On a lightly floured surface roll out the pastry and line a greased 20cm flan dish with the pastry. Transfer the apple mixture onto the base and flatten.
In the preheated oven bake to 30 minutes. Take out of the oven and garnish with the candied lemon peel.
Return into the oven and bake for a further 10 minutes until the filling is set and the pastry is golden.
Serve hot or cold.
