Wine butter sauce recipe details
Ingredients
1 tbsp | butter |
2 | shallots, pureed |
1 | bay leaf, crushed |
1 tsp | peppercorns |
240 ml | dry white wine |
120 ml | double cream |
1 tsp | lemon juice |
230 g | butter |
1 tsp | chives, chopped |
Instructions
Melt 1 tablespoon of butter in a pan over low heat. Add the shallot puree and bay leaf and sautee for 1 minute.Add white wine and the remaining ingredients and let simmer until sauce is reduced by two-thirds.
Add the double cream then and the butter a quarter at a time. Whip briskly over high heat. Strain through sieve and use sauce over chicken.
