Wild herb soup recipe details
Ingredients
3 | onions, chopped |
1 | bouquet garni |
2 tbsp | oil |
salt and pepper | |
400 g | potatoes, peeled and quartered |
200 g | single cream |
lemon juice | |
200 g | wild herbs, e.g. chervil, nettle, sorrel, chopped |
200 ml | dry white wine |
1 tsp | peppercorns |
Instructions
In a saucepan heat 1 tablespoon of oil. Sauté the onions until lucent. Deglaze with the wine and 1 litre of water. Add the bouquet garni and bring to a boil. Add 1/2 teaspoon of salt and the peppercorns. Cover and cook over low heat for 45 minutes.Strain the soup through a sieve into a clean saucepan. Add the potatoes and bring to the boil. Cook until the potatoes are soft. Add the cream and the herbs and bring to the boil again. Purée the soup and season to taste with salt, pepper and lemon juice.
