Ingredients
For the cream: | |
150 g | white chocolate |
150 g | crème fraîche |
2 tbsp | icing sugar |
400 g | single cream |
For the sponge: | |
6 | eggs |
1 pinch(es) | salt |
250 g | sugar |
200 g | almonds, ground |
1 tbsp | corn starch |
Instructions
Roughly chop the white chocolate. Heat the Crème fraîche with the icing sugar and melt the chocolate in the cream while stirring. Set aside on a cool place for 30 minutes.Preheat the oven to 175°C. Line the bottom of a springform pan (24 cm in diameter) with parchment paper.
Separate the eggs. Whisk the egg whites with a pinch of salt until stiff. Add the sugar and the egg yolks while stirring. Combine the almonds with the cornstarch and fold in.
Spoon the dough into the cake tin and bake for 30 minutes. Allow to cool slightly, remove the tin and let cool completely on a wire rack.
Beat the single cream until stiff. Add in the chilled white chocolate cream, spoon by spoon.
Halve the sponge crossways, then divide evenly 1/3 of the chocolate cream onto the cake. Cover with the other half of the sponge and coat the cake all around with the remaining cream.
