Ingredients

1 kg	white cabbage
60 g	diced pancetta
2 tbsp	lard
1	onion, peeled and finely chopped
	salt
	white pepper
1 tbsp	caraway seeds
¼ l	dry white wine
	sugar

Instructions

Trim the outer leaves from the cabbage and cut into quarters. Take out the hard stalk and shred the cabbage finely.

Take a heavy-based saucepan, heat the lard and fry the pancetta for 5 minutes. Add onion and cabbage fry for 10 minutes. Season with salt, pepper and caraway seeds then add the white wine.

Cover and let it simmer for approximately 45 minutes. At the end add a little bit of sugar to taste.
