Instructions
Wash the apples and remove any over-ripe brown bits, cut into quarters and just cover with water in a large covered preserving pan. Boil until just soft, but not pulpy.Scald several layers of muslin with boiling water, suspend over a bowl and pour in the fruit. Allow it to drip overnight but do not squeeze the fruit as it will cloud the final jelly.
Carefully measure the amount of liquid obtained. Allow 450g of sugar for each 600 ml of liquid (30g sugar per 40ml liquid).
Place the liquid and relevant weight of sugar into the preserving pan and heat on a moderate heat and stir until the sugar dissolves. Bring to a boil, while still stirring, and then boil rapidly for 10 minutes. Remove any scum that collects.
To test the jam for readiness, drop a little onto a chilled plate or saucer. If it forms into a blob that creases when pushed by a finger tip, it is ready.
Remove jam from the heat and allow it to cool for several minutes.
Add a tablespoon or so of whisky, to taste, to the mix. Pour into warm, sterilised glass jars. Cover with waxed paper rings and seal with cling film. Add a label and store for at least 3 months before use.
