Walnut brittle parfait recipe details
Ingredients
320 g | sugar |
300 g | walnuts |
6 | egg yolks |
550 g | single cream |
Amaretto, to taste |
Instructions
In a saucepan, caramelise 170g sugar with 3 tablespoons of water over medium heat until the sugar is golden brown. Add the walnuts. Stir well, so that each nut is coated by caramel. Leave to stand in a cool place (but not in the fridge).Whisk the single cream until stiff. In a water bath, whisk the eggs with the remaining sugar until creamy.
Crush the caramelised walnuts (e.g.with the bottom of a saucepan) and stir the crumbles into the egg mixture. Fold in the whipped cream and refine to taste with Amaretto.
Freeze overnight and serve the parfait the other day.
